Frozen Berries in Hot White Chocolate with Almonds


Sweet Love1 cup heavy cream

10 oz good white chocolate (Valrhona is an excellent choice), chopped into tiny pieces

1 tsp vanilla flavoring

1 tsp almond flavoring

1 lb frozen mixed berries – blueberries, raspberries, strawberries are fine – slightly thawed.

¾ cup chopped blanched almonds


DIRECTIONS –

To toast almonds, spread in ungreased skillet on low flame. Stir constantly until browned. Set aside.

Meanwhile, remove berries from freezer and spread on a baking sheet coated with waxed paper. Leave out until slightly thawed.

TO MAKE SAUCE:

In a double boiler over simmering water combine the cream, the chopped chocolate and flavorings. Stir until melted.

Immediately divide semi-thawed berries into four bowls and spoon hot white chocolate sauce over each. Top with toasted almonds.

The result is the most gooey and magical surprise in the world! Perfect for a summer evening.
