Frozen Berries in Hot White Chocolate with
Almonds
1 cup heavy cream
10 oz good white chocolate (Valrhona is an excellent choice),
chopped into tiny pieces
1 tsp vanilla flavoring
1 tsp almond flavoring
1 lb frozen mixed berries – blueberries, raspberries, strawberries
are fine – slightly thawed.
¾ cup chopped blanched almonds
DIRECTIONS –
To toast almonds, spread in ungreased skillet on low flame. Stir
constantly until browned. Set aside.
Meanwhile, remove berries from freezer and spread on a baking
sheet coated with waxed paper. Leave out until slightly thawed.
TO MAKE SAUCE:
In a double boiler over simmering water combine the cream, the
chopped chocolate and flavorings. Stir until melted.
Immediately divide semi-thawed berries into four bowls and spoon
hot white chocolate sauce over each. Top with toasted almonds.
The result is the most gooey and magical surprise in the world!
